We are well into the field hockey season and getting closer to Christmas. To help you make some real unique and special gifts we now have all three Penn State fabrics in stock as well as a great Boy Scout licensed fabric(http://www.wilsonscalico.citymax.com/catalog/item/1960156/6347263.htm).
We had these available at the Kutztown Folk Festival this summer and they were a big hit.
Our October block is now posted and it is the last of this size block. November's is the large block in the center and for December We will be posting the sashings and completion directions. I guess that means I better get started on next year's series!

Kenzie loves muffins with cream cheese filling but I made these a few days ago. She voiced her disapproval on the fact that there was no filling but when I returned from work I found that only 2 remained of the dozen I left. Pretty sure the dog didn't eat them, I mean he is a smart dog but I don't think he has mastered opening the microwave!

Lemon Poppy Seed Cheese Muffins

2 cups all-purpose flour
1/4 cup poppy seeds
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup butter or margarine
3/4 cup sugar
2 large eggs
3/4 cup ricotta cheese
2 Tablespoon lemon juice
1 teaspoon vanilla extract

*Heat the oven to 400ยบ. Generously grease 12 muffin cups

*In a large bowl, combine the flour, poppy seeds, salt, and baking soda. In a medium-sized bowl, with electric mixer on high speed, beat the butter and sugar until light and fluffy. Reduce the speed to medium and beat in the eggs, one at a time, unitl well blended. Beat in the ricotta cheese, lemon juice, and extract.

*With a rubber spatula, fold the butter mixture into the flour mixture just until moistened. The batter will be lumpy. Divide the batter among the greased cups.

*Bake the muffins 15 to 20 minutes, or until a cake tester comes out clean. Remove the muffins from the cups and serve warm.
